toallthingsunforseen asked: My pancakes never turn out right, ie. golden brown on both sides. Mine are always nicely browned on one side but splotchy(like how acne is) on the other. What am i doing wrong?!? oh, and my pancakes are really really dense, unlike the fluffy yummy ones. HELP!!


Answer:

Dense pancakes are definitely no fun! Have you tried using buttermilk or sour-cream in your pancakes? They produce a beautiful tender and fluffy texture. Two good recipes:

Buttermilk Pancakes

Sour-Cream Pancakes

Tips:

  • Don’t overwork your pancake batter, it’ll make your cakes dense!
  • Make sure your skillet/griddle is really hot before pouring your batter.
  • Don’t go flip crazy. Over-flipping will also toughen your cakes.
  • If you don’t plan on serving your pancakes immediately, stack them on an oven-proof plate and keep them warm in a preheated 200 degree oven.

You could also just skip the pouring and flipping and go the delicious dutch baby route, my preferred method. :) :
