Chickpea Ravioli
in a lemon pepper cream sauce, topped with a simple jerusalem salad and chive oil.
This dish is a little play on falafel that I made for a group of about twenty people last night. I took a little bit of a risk because i’d never made anything like this before, but I think it paid off! The crunch of the cucumber really enhanced the flavor of the chickpeas in the ravioli, and the chive oil really was a nice complement to the sauce.
