  1. Local Mint Creek Lamb’s Brain with Anchovy and Quail Egg I had the opportunity to attend another XMarx dinner last night with Sieger and Jacob. The theme: Offal. I’ve regularly eaten tripe and sweetbreads before but never brains or testicles. I have to say dinner was delicious!! On the menu: Chicken Liver Pate with Apple Chutney, Endive Mint Creek Lamb’s Brain Salad, Anchovy, Quail Egg Bahn Mi with Headcheese and Green Papaya Kung Pao Lamb’s Testicles Trio of Tripe, Sirloin, Tongue and Cheek Stout Cheesecake
