  3. Spinach, Chicken and Feta Lasagne
topped with a few slices of fresh mozzarella
The best lasagne I’ve ever made.. by a total fluke. I got home at 5:15 last night and threw this together as fast I possibly could to make it to my 6:30 class. When it’s just the two of us, I bake our lasagne in loaf pan which turns out about 2 1/2 servings. It’s nice because it cooks faster and there’s less waste. Perfect for leftover haters like us.

  4. Pan Seared Pork Loin Chops with Swiss Chard
Tuesday’s Dinner
We worked super late so I had to make something quick as soon as we got home. I had a butterflied pork loin in the fridge so I cut it in half and pan seared two pork chops and made a quick pan jus. I grabbed some swiss chard we had from the garden and we were eating dinner in 20 minutes!
